RED WINE GRANITA and SOUS VIDE PLUMS Summer DESSERT

Sous vide plums, cooked in red wine and sugar sauce, served with a delicious red wine granita. A super easy dessert, perfect for summer.

EQUIPMENT

  • Sous vide cooker
  • Glass jars

INGREDIENTS:

  • 4 large Black plums
  • 240 ml (1 Cup) Red Wine
  • 100 g (1/2 Cup) Brown or white sugar
  • Cinnamon sticks, star anise, cardamon pods, juniper berries (optional)

Prepare your water bath, setting the temperature to 75° C (170F) if you use bags or 80° C (176F). if you use glass jars.

Cut the plums in half and remove the stones. Divide each plum into 4 pieces.

In a small saucepan, heat the red wine and sugar, until the sugar is completely dissolved.

Fill the glass jars 2/3 full with the prunes and the red wine syrup. Seal your jars fingertip tight. This means just barely closed and still possible to open with your fingertips. Once the ring stops turning freely, it is tight enough (Air will be able to escape from the jars when you submerge them in water. Jars sealed too tightly can burst in the water.) Add spices if desired.

Set the glass jars in the water bath, and cook for 2 hours. At the end of the time, take out the jars being careful not to burn yourself. Open the jars and pour the liquid onto a plate or tray large enough to allow you to create a layer of syrup no more than 1 cm. Make sure the plate or tray has edges that do not the syrup spill.

Let the syrup cool to room temperature, and put it in the freezer. Every 30 minutes, mix it well with a fork, scraping the bottom and edges of the plate and breaking up the larger pieces that eventually form. After about 4 hours, a red wine granita will have formed.

Leave the plums in the jar, close and refrigerate until ready to serve.
Just before serving, arrange 4 pieces of plum and a couple of tablespoons of granita on a dessert plate. Enjoy this fantastic dessert now!
